Gluten Free Baked Coconut Lime Doughnuts

Ingredients
- 1 stick of butter, melted
- 1/2 c. brown sugar
- 1/2 c. applesauce
- 1 tsp. vanilla
- Zest of one lime
- 2 Tbsp. lime juice
- 1/4 c. milk
- 2 eggs
- 1 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/4 c. cornstarch
- 1 c. coconut flakes, ground
- 3/4 c. gluten free flour blend
Lime Drizzle
- 2 Tbsp. butter, melted
- 2 Tbsp. lime juice
- 2/3 c. powdered sugar
Instructions
- Preheat the oven to 350 degrees.
- In a large mixing bowl, whisk the butter, brown sugar, applesauce, vanilla, lime zest, lime juice, milk, and eggs. Then, whisk in the baking powder, salt, cornstarch, ground coconut flakes (I used a food processor), and gluten free flour blend.
- Spoon or pipe into greased doughnut wells. Fill about 1/2 - 2/3 full. Next, bake for 9-12 minutes, until lightly browned and an inserted toothpick comes out clean. Allow to cool.
- LIME DRIZZLE: In a small bowl, whisk the butter and lime juice. Then, whisk in the powdered sugar. Add a little more powdered sugar or liquid until a thick, but pourable glaze is formed. Use a spoon to drizzle over the doughnuts. If desired, garnish with lime zest and toasted coconut flakes.
