Gluten Free Crispy Pork Chops

Ingredients
- Olive oil
- 4 boneless pork chops
- 1/4 c. gluten free flour (I used oat flour)
- 1 egg
- 1/2 c. gluten free breadcrumbs
- 2 Tbsp. Parmesan cheese
- 1 Tbsp. Italian seasoning
- 1 tsp. garlic powder
- Salt and pepper
Instructions
- For best results, allow the pork chops to sit on the counter and come to room temperature.
- Preheat the oven to 425 degrees.
- Prepare a shallow dish with 1/4 cup of gluten free flour. In another shallow dish, use a fork or whisk to beat one egg. In a third dish, stir the gluten free breadcrumbs, Parmesan cheese, Italian seasoning, and garlic powder.
- Season the pork chops with salt and pepper. Then, lightly dip in the flour. Next, dip each pork chop into the egg mixture. Finally, coat with the breadcrumb mixture.
- Heat a skillet with 1-2 Tbsp. of olive oil over medium-high heat. Sear the sides of each pork chop for 2-3 minutes, until browned. Then, remove from the heat and place on a parchment-lined baking sheet.
- Bake for 12-14 minutes. Thicker pork chops will take longer to bake. The internal temp should reach 145 degrees. Allow the pork chops to rest for a few minutes prior to serving.
