Gluten Free Fettuccine Alfredo

With only 3 ingredients and 10 minutes, this gluten free fettuccine Alfredo makes the perfect carby side dish! Pour the sauce over veggies for a low carb version.

Ingredients

  • 8 - 9 oz. gluten free fettuccine
  • 4 Tbsp. butter
  • 1 c. heavy cream
  • 1 c. Parmesan cheese, grated
  • Black pepper

Instructions

  • In a large saucepan, boil the pasta according to package directions. I used a refrigerated gluten free pasta from Aldi, which took only about 3 minutes to boil.
  • In a large skillet, melt the butter over low heat. Then, stir in the cream. Bring to a gentle boil and allow to simmer for 3-4 minutes.
  • Next, freshly grate the Parmesan cheese over the skillet. Stir until the cheese is melted and sauce has thickened enough to coat the back of a spoon. Season with black pepper.
  • Add the drained pasta to the skillet and stir until well coated. If desired, garnish with more grated Parmesan cheese.
