Gluten Free Peach Baked Oatmeal

Ingredients

  • 4 Tbsp. butter, melted
  • 1/4 c. brown sugar
  • 2 Tbsp. maple syrup
  • 1/2 c. Greek yogurt
  • 2 eggs
  • 1 1/2 c. milk (can be dairy free)
  • 3 c. old-fashioned or rolled oats
  • 1 large peach, diced

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, whisk the butter, brown sugar, maple syrup, and Greek yogurt. Then, whisk in the eggs and milk. Next, use a spatula to fold in the oats and diced peach.
  3. Pour batter into a greased 3 qt. or 9x13 baking dish. Then, bake for 35 minutes.
