Gluten Free S'mores Cereal Treats
For a twist on classic Rice Krispies treats, these gluten free s'mores cereal treats make the perfect no-bake summer treat!

Ingredients
- 4 c. crispy brown rice cereal
- 2 c. gluten free graham cracker pieces
- 2 c. mini marshmallows
- 1 c. chocolate chips or about 4 oz. of Hershey bars, chopped
- 6 Tbsp. butter
- 10 oz. large marshmallows (or any size)
Instructions
- In a large mixing bowl, combine the cereal, graham crackers, 1 1/2 cups of mini marshmallows and the chocolate chips (or about 2/3 of the chopped chocolate bars.) Save the remaining mini marshmallows and chopped chocolate to press into the tops of the bars.
- In a medium saucepan, melt the butter over low heat. Then, add the bag of large marshmallows and stir until melted.
- Pour the melted marshmallow mixture over the cereal mixture and quickly stir until well-coated. Pour mixture into a lined or greased 9x13 baking dish. Lightly press the mixture, using clean fingers or the bottom of a measuring cup. Next, add the remaining mini marshmallows and chocolate bars. Again lightly press (the more you press, the harder the treats will be.) Allow to cool to room temperature before cutting into squares.
