Gluten Free Strawberry Pretzel Salad

Ingredients

  • 2 c. gluten free pretzels
  • 4 Tbsp. butter, melted
  • 8 oz. cream cheese, softened
  • Juice of 1/2 lemon (about 1 Tbsp.)
  • 1/2 c. Greek yogurt
  • 1 - 2 c. whipped topping
  • 1/4 c. powdered sugar
  • 2 lbs. strawberries
  • 2 Tbsp. powdered sugar

Instructions

  • Preheat the oven to 350 degrees.
  • In a small food processor, chop the pretzels into small pieces. Then, add the melted butter and blend or stir with a spoon. Press into a greased or lined 8x8 baking dish. Bake for 7-8 minutes. Next, remove from the oven and set aside.
  • In a large mixing bowl, beat the cream cheese until smooth. Then, beat in the lemon juice, yogurt, whipped topping, and 1/4 cup of powdered sugar. Use an offset spatula or small spoon to smooth the top. Cover and refrigerate for at least 30 minutes.
  • Wash and slice the strawberries. About 30 minutes before serving, top the strawberries with 2 Tbsp. of powdered sugar. Stir and let sit. This will draw the liquid from the strawberries, creating a sweet syrup. Spoon strawberries over each slice before serving.
