Key Lime Baked Oatmeal Cups

Ingredients

  • 2 Tbsp. butter, melted
  • 1/2 c. applesauce
  • 2 Tbsp. maple syrup or sugar-free sweetener (or 1/4 c. sugar)
  • Zest of 1 lime
  • 2 Tbsp. lime juice
  • 2 eggs
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 scoops protein powder or 1/4 c. gluten free flour blend
  • 1 1/4 c. milk (can use dairy free)
  • 2 c. old-fashioned or rolled oats
  • 1/2 - 3/4 c. white chocolate chips

Lime Drizzle

  • 1 Tbsp. butter, melted
  • 1 Tbsp. lime juice
  • 1/3 c. powdered sugar

Instructions

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, whisk the melted butter, applesauce, maple syrup, lime zest, lime juice, and eggs. Then, whisk in the baking powder, salt, and flour or protein powder. Carefully whisk in the milk. Next, fold in the old-fashioned or rolled oats and white chocolate chips.
  • Scoop about 1/4 cup of batter into 12 lined muffin cups. I recommend lightly spraying paper muffin liners. Then, bake for 30 minutes. You can also bake in a greased 9x13 baking dish.
  • LIME GLAZE: In a small mixing bowl, whisk the melted butter, lime juice, and powdered sugar. Add a little more liquid or powdered sugar, until a thick glaze forms. Then, use a spoon to drizzle over the oatmeal.
