Buffalo Chicken with Sweet Potato Planks

Bursting with spicy flavor, these strips of Buffalo chicken are served on broiled sweet potato planks!

If you like a little spice, this Buffalo chicken makes for an easy dinner. With only 4 sauce ingredients- it’s still big on flavor! Reminiscent of those little wings you’ve come to know and love, this version is not deep fried or dripping with butter, but I doubt you will have any complaints!

Oh- and this dish would also be terrific sitting atop a bed of greens. It just may quickly become your favorite!

  • Chicken Tenderloin
  • Sweet Potatoes
  • Olive Oil
  • Lime
  • Hot Sauce
  • Butter
  • Brown Sugar

How to Make Sweet Potato Planks

  1. Slice the sweet potato into planks, about 1/4 inch thick. If desired, peel off the skin.
  2. The thinner the slice, the faster the cooking process. Uniform thickness will ensure they take the same amount of time to cook.
  3. Brush both sides with olive oil. Then, season with salt and pepper.
  4. Set the oven to high broil. (This will allow the sweet potatoes to cook quickly.)
  5. Watch the broiler carefully!
  6. The second side will cook faster than the first side.
  7. Use a fork to check for tenderness.

What is Buffalo sauce?

Buffalo sauce is hot sauce plus a fat, usually butter. This creates a creamy sauce, perfect for meat and veggies! Buffalo wings, and the sauce, originated from Anchor Bar, located in Buffalo, New York...hence the name. They were created as a way to use chicken wings that had been accidentally delivered to the bar. No buffalo or bison are harmed in the making of this sauce. Since the beginning, Buffalo wings have been served with bleu cheese dip and celery to balance the heat of the Buffalo sauce.

Ingredients
  • Olive oil
  • 1 lb. chicken tenderloins
  • Salt and pepper (or garlic salt)
  • Juice of 1/2 lime
  • 1/4 c. hot sauce
  • Zest & juice of 1/2 lime
  • 1 Tbsp. butter, melted
  • 1 Tbsp. brown sugar
  • 2 sweet potatoes, cut into 1/4 inch planks
  • Optional: shredded cheese
Instructions
  • In a large skillet, heat 2 Tbsp. of olive oil over medium heat. Season both sides of the chicken with salt and pepper. Then, brown each side for about 4 minutes. Next, squeeze 1/2 lime over the chicken, cover with a lid, and allow to cook for 5 minutes.
  • Meanwhile, heat the oven to high broil. Brush sweet potato planks with olive oil. Then, season with salt and pepper. Broil on the first side for about 7 minutes. Next, broil on the second side for 3-5 minutes, until fork tender.
  • In a small bowl, whisk the hot sauce, lime zest, lime juice, butter, and brown sugar. Set aside. Remove the chicken, but keep the skillet on medium heat and allow the leftover juices to simmer for 1-2 minutes. Slice the chicken. Then, add hot sauce mixture to the skillet. Stir and allow to cook for 1-2 minutes. Add the chicken back to the skillet. Finally, stir until well-coated.
