Chicken Caprese Salad

Happy Father's Day! If your dad enjoys Italian food, check out this fresh take on a chicken Caprese salad!

Classic Caprese salads consist of sliced tomatoes, fresh mozzarella, basil, and perhaps a bit of olive oil or balsamic vinegar. They are DE-lish! But, that is an awful lot of mozzarella... At least, way too much to be considered a healthy salad! Traditional Italian versions are plated in a circular pattern and would have little to no lettuce present.

So, I took the best parts of a Caprese salad....well, basically all of the parts...and created my own healthier version.

Plus, I added some chicken for protein!

Tomato Salad with Mini Mozzarella Balls

Ingredients for Caprese Salad

  • Lettuce/Mixed Greens
  • Sliced Tomato
  • Fresh Basil Leaves
  • Mozzarella
  • Olive Oil/Italian Dressing
  • Oregano

What does caprese mean?

The dictionary defines caprese as a salad with tomatoes, mozzarella, basil, and olive oil. The red, white, and green represent the Italian flag. If another dish uses the term caprese- if often refers to tomatoes, basil, and mozzarella.

Where did caprese originate?

In the 1920s, it was created as a tribute to the Italian culture. The colors, foods, and flavors perfectly reflect Italy! Made with fresh ingredients is the best!

What to Serve with a Caprese Salad

  • I like to add chicken and enjoy as a meal
  • Protein- fish, chicken, pork, beef
  • Crusty bread

Ingredients
  • 5 oz. mixed greens
  • 2 plum tomatoes, sliced
  • 2 c. shredded chicken
  • Mini mozzarella balls
  • Fresh basil leaves
  • Italian dressing or olive oil
  • Dried oregano and/or Italian seasoning
Instructions
  1. In a large salad bowl or individual plates, top mixed greens with sliced tomatoes, chicken, mozzarella, and fresh basil. Drizzle with Italian dressing or olive oil. Finally, season with salt, pepper, dried oregano, and/or Italian seasoning.
