Every time I hear fajitas, I picture a sizzling, black skillet from Chilis. And, I don't think I've ever ordered them, not when bottomless chips and cheesy enchilada soup exist, but fajitas always look and smell amazing!
Originally, I set out to make a fajita pasta bake. But, that requires a lot more time and carbs. Instead, I decided to sauté some onions, peppers, and chicken. Then, add a bit of seasoning and be done.
Simple. Delicious. Low Carb. And ready in less than 30 minutes!
This skillet would be awesome inside taco shells or tortillas, but it's also perfect on its own.
Fajita actually refers to the cut of meat that is traditionally used in this dish- carne asada or skirt steak. Today, fajitas are made with a variety of meats and even vegetarian. The most common staples include meat, grilled onions and peppers, and served on a flour or corn tortilla.
With just one pan and a few simple, yet flavorful ingredients, this chicken fajita skillet makes a terrific dinner any night of the week!
