I think we can all agree- we need more simple in our lives. Pretty, please! But, when it comes to food, we also want it to be healthy and delicious and not break the bank...oh, and something our children will willingly eat. Unfortunately, that can be a very tall order!

But, this salsa chicken has it all! Simple, healthy, flavorful, gluten free, low carb, cheap I mean...it only involves 2 ingredients (plus olive oil, salt, and pepper.) I'm already all in! Now, it may take 30 minutes, but you can walk away for 20 of them while it simmers away. Let's go!

And, this chicken is perfect for tacos, enchiladas, burritos, a salad....there are so many ways to use! Simply use two forks or a hand mixer for this tender, Mexican shredded chicken.

What to Serve with Salsa Chicken

I like to serve salsa chicken with rice or cauliflower rice.  Sometimes, I will make tacos with corn tortillas or layer the chicken on top of tortilla chips for easy nachos! This Mexican shredded chicken is also a flavorful protein for a salad. Plus, it would pair well with crusty bread or mashed potatoes and a green veggie. So simple and versatile- this just may become your new weekly go-to!

  • Chicken Breasts
  • Salsa
  • Olive Oil
  • Salt and Pepper

How to Make Easy Stovetop Salsa Chicken

  1. Heat a saucepan with 1-2 Tbsp. of olive oil over medium heat. Then, add the chicken and brown each side for about 5 minutes each. Season with salt and pepper.
  2. Pour one jar of salsa (about 16 oz.) over the chicken. Next, cover with a lid and allow to simmer for 20 minutes.
  3. Turn off the stove, remove the lid, and allow the chicken to cool slightly. Then, remove chicken from the pan and shred with two forks or a hand mixer. Return to the pan and stir with the salsa.

What type of salsa will work best?

Any salsa will work! I recommend choosing a high quality salsa you enjoy, since that will provide all of the flavor. I chose a medium, tomato-based salsa- but, any variety or heat level will do.

Can I make salsa chicken in a slow cooker?

You bet! The same recipe will work in a slow cooker. Simply add the chicken, salt, pepper, and salsa to the slow cooker. Then, cook on high for 1 1/2 - 2 hours or low for 4 hours.
