I LOVE a good no-bake cheesecake! You don't have to mess with eggs, the oven, or worrying about whether or not the top will crack. Just a yummy dessert with less fuss. Plus, it's lighter, creamier, and can be ready in much less time! Sign me up.
A few years ago, I decided to marry probably two of the best desserts: cheesecake and apple crisp. The results were delicious! Though, baking alone took over 30 minutes, plus there was prepping and assembly. Somedays, you just can't wait that long! This time I chose to stick with simplicity and create individual servings. You can assemble just before serving or make-ahead and store in the fridge. But be aware, with some gluten free graham crackers, they may become soft while sitting in the fridge. I say just be prepared to serve with a fork.
This cheesecake mixture also makes a wonderful dip!
1. Peel and dice the apples.
2. Heat oil over medium heat.
3. Sauté the apples for 4-5 minutes, until a fork can easily pierce.
4. Season with cinnamon and brown sugar.
5. Enjoy with whipped cream, whipped topping, ice cream, or cheesecake. Just like warm apple crisp, without the hassle.
