Gluten Free Baked Apple Cider Doughnuts

Nothing beats biting into a warm, gluten free baked apple cider doughnut on a crisp fall day! They make the perfect homemade treat for brunch, dessert, or even a sweet snack!

It's apple season!

After a crisp fall morning of picking apples at the orchard, you deserve a warm treat! And, you've been eyeing those apple cider doughnuts, but sadly they're never gluten free!

So, pick up some apple cider and make your own at home!

In less than 30 minutes, you will have a sweet, cakey snack loaded with fall flavors! These apple cider doughnuts are baked, not fried. And, no frying means no oil. Less mess. Oh, and they're healthier!

You could use apple juice, but don't expect the same amount of apple flavor. For the best results, concentrate the apple cider for even more flavor!

How to Concentrate Apple Cider

To concentrate apple cider, you simply need to reduce it. Start with 1 1/2 cups of apple cider. Place in a small saucepan and simmer over low heat for 10-20 minutes. Mixture should reduce down to about 1/2 a cup. Allow to cool before adding to batter.

 

Tips & Tricks

  • Use a  mix or blend of gluten free flours.
  • Pipe batter into doughnut pan. (use a piping bag or Ziploc bag and cut off a corner)
  • Fill doughnut wells only about 1/2 to 2/3 of the way.

  • Apple Cider
  • Vanilla
  • Eggs
  • Cinnamon
  • Nutmeg
  • Baking Powder
  • Salt
  • Corn Starch
  • Gluten Free Flour Blend

 

Apple Cider Glaze

This buttery, apple glaze gives an extra boost of sweet apple cider. Simply dip the top of each warm doughnut. You could also dip in melted butter and dust with a cinnamon-sugar mixture.

2 Tbsp. butter, melted

1 Tbsp. apple cider

Is apple cider gluten free?

Yes, apple cider is naturally gluten free. To make apple cider, apple juice is fermented with yeast and sugar. Technically, they could use a "baker's" yeast, like is used in beer, which would not be gluten free. However, it is rarely, if ever, used in apple cider. Even hard cider is almost always gluten free.

Ingredients
  • 1 stick of butter, melted (1/2 c.)
  • 1/2 c. brown sugar
  • 1/4 c. coconut sugar
  • 1 tsp. vanilla
  • 1/2 c. apple cider
  • 2 eggs
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 c. corn starch
  • 1 1/2 c. gluten free flour blend

Apple Cider Glaze

  • 2 Tbsp. butter, melted
  • 1/2 c. apple cider

Cinnamon Drizzle

  • 1/2 c. powdered sugar
  • 1/4 tsp. cinnamon
  • 1+ Tbsp. apple cider
  • 1 Tbsp. butter, melted
Instructions
  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, beat the melted butter, brown sugar, coconut sugar, vanilla, and apple cider. Then, beat in the eggs, cinnamon, nutmeg, baking powder, salt, corn starch, and gluten free flour blend. Scoop batter into a piping bag.
  • Grease a doughnut pan with melted butter or nonstick spray. Pipe batter into each doughnut well, until about 1/2 to 2/3 full. Bake for 9-12 minutes, until an inserted toothpick comes out clean. Allow to cool for a few minutes.
  • APPLE CIDER GLAZE: In a small bowl, melt the 2 Tbsp. of butter. Next, whisk in the apple cider. While doughnuts are still warm, dip one side of each doughnut into the apple cider glaze.
  • CINNAMON DRIZZLE: In a small bowl, whisk the powdered sugar, cinnamon, and apple cider. Then, whisk in the melted butter. Add more apple cider or powdered sugar, until a thick glaze is formed. Pipe or drizzle over the doughnuts.
