Gluten Free Baked French Toast Casserole

French toast casserole may seem complicated, but it's actually super simple to make! Just a little prep the night before, pop into the oven in the AM, and you'll have a hearty and comforting breakfast on the table! It already looks pretty fancy, but you can jazz it up even more with a streusel or chopped nut topping!

This casserole is perfect for day-old bread, when it's a little dried out. This allows the bread to soak up more of the egg/milk mixture. You can also "dry-out" the bread yourself. And, it will work with almost any type of bread- Italian, French bread, sourdough, brioche, rolls, croissants... I like to tear the bread for a more rustic feel. This dish only requires a few simple ingredients, but the flavor is AMAZING! Plus, it can easily be made gluten free, dairy free, or even vegan with an egg-free custard!

  • Loaf of Gluten Free Bread
  • Eggs
  • Milk (can use dairy free)
  • Cinnamon
  • Pumpkin Pie Spice (optional)
  • Vanilla
  • Maple Syrup
  • Butter

How to Make Gluten Free French Toast Casserole

  1. Start by greasing a 9x13 baking dish. Then, add cubes of bread.
  2. Next, whisk the creamy custard. In a medium bowl or large measuring cup, combine the milk, maple syrup, butter, eggs, vanilla extract, and spices. Whisk until combined.
  3. Then, pour the liquid over the bread and ensure all pieces are covered.
  4. Tightly cover and refrigerate for at least 2 hours.
  5. Bake 350 degrees for 20 minutes, covered and then 25 minutes, uncovered.
  6. Enjoy!

Can I use a regular loaf of bread?

This recipes works with almost any type of bread. A good ole' loaf of Wonder bread or crusty sourdough would be heavenly! For an elevated dish, you can even try brioche or Sweet Hawaiian rolls!

Can I make dairy free?

You bet! Some recipes may call for half-and-half or cream, in addition to or in place of milk. I used unsweetened almond milk and it worked beautifully! You could also use dairy free versions of cream or half-and-half.

Can I make the same morning?

Yes- if you forgot the night before, you can prepare and bake the same morning, but it's not the preferred method. This casserole is best when it's had a chance to sit in the fridge for a few hours. This allows the bread to soak up all of the liquid before baking. Allow to sit in the fridge for at least one, if not two, hours prior to baking.

Ingredients
  • 1 loaf of gluten free bread
  • 2 c. milk (can use dairy free; can replace some of the milk for half-and-half or cream)
  • 2 Tbsp. maple syrup (I used a monk fruit version)
  • 2 Tbsp. butter, melted
  • 6 eggs
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1/2 tsp. pumpkin pie spice

Instructions
  • DRY OUT BREAD: Preheat the oven to 300 degrees. Cut or tear the bread into cubes/rectangles. Spread out on a sheet pan and bake for 8-10 minutes, until dried. Allow to cool.
  • Grease a 9x13 baking dish. Then, add the bread to the dish. Next, whisk the milk, maple syrup, butter, eggs, vanilla, cinnamon, and pumpkin pie spice. Pour liquid over the bread, making sure to cover each piece. Then, cover and refrigerate for 2-12 hours.
  • Preheat the oven to 350 degrees.
  • Allow the baking dish to sit on the counter for a few minutes before placing in the oven. Bake covered for 20 minutes. Then, remove the cover and bake for an additional 25 minutes.
