So, what exactly are blondies?
Blondies are basically blonde brownies, but recipes and the final texture can vary quite a bit. Some are more cake-like, while others can resemble gooey brownies or more like a cookie bar. I’ve created a few blondie recipes over the years- Gluten Free Lemon Blueberry, Gluten Free Lemon Bar, Gluten Free Peanut Butter Protein, and Gluten Free Dirty Blondies. But today, I decided to go with butterscotch.
Now, when I think of butterscotch- a sauce served over ice cream or my Grandma noisily opening up those little yellow candies comes to mind. Other than that, it’s rare to really see or even think about butterscotch. But with butterscotch as the star- think of these kind of like delicious brown sugar blondies!
Perfect for potlucks, parties, or backyard BBQs. These butterscotch blondies are guaranteed to be a crowd pleaser! Super simple, but they’re a bit unique- so yours will be the only ones there! And, butterscotch is always in season- so they’ll be soft, sweet, and fabulous year-round!
First, I started with browned butter- for an even deeper and richer flavor Then, whisk in a few of the usual baking suspects- brown sugar, eggs, vanilla, cream, baking soda, salt, and a gluten free flour. That’s right- no mixer required! Just one bowl, a whisk, and a spatula. Next, stir in some butterscotch chips and bake. Be sure to cool completely before slicing.

Butterscotch is basically caramel’s darker cousin. Caramel is made from cooking white sugar, until it’s melted and golden brown. Butterscotch is made from brown sugar. The molasses in brown sugar provides the darker color and a sweeter, softer, and richer flavor.
Blondies are basically white or blonde brownies. Very similar to a brownie, but instead of being made with cocoa or chocolate, blondies uses brown sugar and vanilla to create a rich, sweet, and slightly caramelized flavor.
These butterscotch blondies can be stored at room temperature for 4-5 days. You can also store in the fridge for up to 1 week! These blondies can also be frozen for up to 3 months.
