Citrus fruits are some of my favorite summer flavors and lime is where it is at! I LOVE lime- like a whole lot!
In case you have never visited a tropical island, coconut and lime go together beautifully! Actually, I've never visited a tropical island, yet somehow I know that...
I've heard that there are a few people out there who do not like coconut. So strange! Just kidding...a few of them are in my family. But, they are just WRONG! Coconut is amazing! Coming from a type of palm tree, coconuts produce flakes, oil, water, and even milk. Toasted flakes are my favorite version! And, I mean...over 40 years of the best Girl Scout cookie can't be wrong!
And, there are a few staples that are always in my fridge- limes are at the top of that list! Used in pies, scones, smoothies, sorbets, marinades, cocktails, dressings, and more- limes are very versatile! There are several types of citrus trees that produce limes- and there are many different varieties. Key limes, Persian limes, Makrut limes, desert limes, Australian limes, blood limes, Philippine limes, Spanish limes, sweet limes, wild limes and more! Persian limes, also known as Bearss limes, are the most popular variety.
With coconut and lime- you can't go wrong!
Sweet. Tart. Tropical. Basically, summer cookie perfection on a plate.
Grown in Florida and California, key limes are small with a light yellow color. They are known for being tart and fragrant. Their skin is much thinner, making them last for only a few days. Most notably, they are used for key lime pies. These little babies only produce about 2-3 tsp. of juice.
Of course not! They tend to be the best; however, I cannot always find them at my local grocery store. Also, they produce much less juice than other limes.
Soft and chewy with a crispy edge, these gluten free coconut lime cookies are a summertime must!
