I wasn't even planning on making this a full post, but everyone LOVED the blondies so much! Holidays are the perfect time to make festive desserts where even kids can get involved. One of the simplest Easter treats involves topping a baked good with green icing and chocolate eggs.

So, I came up with a simple, yet delicious gluten free blondie recipe and let my niece and nephew help with decorations.
Think about a warm, gooey brownie…just without the cocoa powder. That’s a blondie! Though, many versions seem more like a cookie bar…but, as we all know from the creation of Brookies- cookie dough and brownie batter are not the same! My batter is somewhere in-between. Brownies tend to use white sugar, while blondies are often made with brown sugar. In addition, blondies have notes of caramel or butterscotch flavors...from the brown sugar.
All of the magic happens in one bowl. I LOVE to cook, but I HATE dishes! Like, the most. It is my least favorite household chore. No need to dirty prep bowls or stir dry ingredients ahead of time. Everything gets mixed in one bowl.
In a large mixing bowl, beat the cream cheese, butter, and coconut oil until smooth. Then, beat in the powdered sugar, vanilla, and cream/milk. Spread or pipe icing over cooled blondies.
These gluten free chocolate chip blondies make a fun treat for Easter or any time of the year!
