Let me let you in on a little secret...gluten free pizza is just NOT the same!

It tries to be and smothered with sauce and cheese, it's good and all....but it's not really fooling anybody. The gluten free world has come a long way, but I've yet to find a truly wonderful gluten free pizza! I like the idea of cauliflower crust packed with extra veggies. And, cauliflower can do a lot of great things, but mimic great pizza crust is not one of them.

I've made a mashed potato pizza crust. Truly delicious, but it's difficult to create a nice, thin crust with slices that can be picked up. Plus, you have to spend all of that time boiling the potatoes before making the crust. There's also keto crust made with cream cheese, almond flour, and more cheese, but that's a lot of extra calories and fat! Or there are more traditional ways to make crust with gluten free flour, but that often involves yeast and time to allow the dough to rise.

I would just like to enjoy pizza night without all the hoops!

Well, this 4-ingredient gluten free dough has become a new favorite! It's simple, but also extremely versatile! I've already used it to make garlic knots and soft pretzels. And, it works beautifully every time! With Greek yogurt, I also love that it's high in protein!

Ingredients in Gluten Free Flatbread Pizza

  • Gluten Free Flour
  • Baking Powder
  • Salt
  • Greek Yogurt
  • Marinara Sauce
  • Mozzarella Cheese
  • Pepperoni
  • Basil

How to Make Flatbread Dough

  1. In a large mixing bowl, whisk the flour, baking powder, and salt. Then, beat in the Greek yogurt.
  2. In the mixing bowl, knead the bread 12-15 times, while adding up to 1/4 cup of more flour as needed. You want to create a just slightly sticky dough.  If desired, refrigerate dough.
  3. Split the dough into 2 or 3 pieces. Next, roll each piece of dough between two pieces of parchment paper.
  4. Brush with olive oil and bake at 375 degrees for 8-10 minutes.  Remove and top with sauce and your favorite toppings. Return to the oven for 8-10 minutes.

  • 1+ c. gluten free flour blend with xanthan gum
  • 2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 c. plain Greek yogurt
  • Olive oil
  • 1/2 c. marinara sauce
  • 1 c. mozzarella cheese
  • Optional: pepperoni, veggies, Parmesan, etc.
  • Optional: dried oregano

Instructions
  • Preheat the oven to 375 degrees.

  • In the mixing bowl, knead the bread 12-15 times, while adding up to 1/4 cup of more flour as needed. You want to create a just slightly sticky dough.  If desired, refrigerate dough.

  • Then, brush with olive oil and bake for 8-10 minutes.  Remove and top with sauce and your favorite toppings. Finally, return to the oven for 8-10 minutes.
