Gluten Free Garlic Flatbread

For a super simple appetizer or side dish, this homemade gluten free garlic flatbread will not disappoint! Buttery and garlicky with melty mozzarella!

A few months ago, I came across a gem! It was a recipe for 30-minute garlic knots. The dough was made with 4 simple ingredients and it was gluten free! It's not the most flavorful by itself, but it has become my go-to recipe for many gluten free recipes, including pizza, garlic knots, and even soft pretzels! And, I LOVE that one of the main ingredients is Greek yogurt! Not many carby foods are also packed with protein!

This version is a cross between flatbread pizza and garlic bread. It makes the perfect appetizer, snack, or side dish!

  • Gluten Free Flatbread Dough
  • Butter
  • Garlic Powder
  • Shredded Mozzarella
  • Dried Oregano

How to Make Gluten Free Flatbread

This gluten free dough is perfect for flatbread, pizza, and more! Made with only 4 simple ingredients, plus it's packed with protein!

1 c. gluten free flour blend

2 tsp. baking powder

1/2 tsp. salt

1 c. plain Greek yogurt

In a large mixing bowl, whisk the gluten free flour, baking powder, and salt. Then, beat in the Greek yogurt. In the bowl, knead dough 12-15 times and add more flour as needed to create a slightly sticky dough. Split dough into 2 pieces. You can refrigerate the dough or use right away.

Reheating Garlic Flatbread

This gluten free flatbread is best enjoyed right away! It can be cut and stored in an airtight container in the fridge for 3-4 days. Simply reheat in the oven or microwave. For the best results, reheat in the oven.

Ingredients
  • 2 Tbsp. butter
  • 1 c. mozzarella cheese, shredded
  • 1/4 tsp. garlic powder
  • 1 tsp. dried oregano

Gluten Free Flatbread Dough

  • 1 c. gluten free flour blend (with xanthan gum)
  • 2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 c. plain Greek yogurt
Instructions
  • Preheat the oven to 400 degrees.
  • In a large mixing bowl, whisk the gluten free flour, baking powder, and salt. Then, beat in the Greek yogurt. In the bowl, knead dough 12-15 times and add more flour as needed to create a slightly sticky dough. Split dough into 2 pieces.
  • Next, roll the dough between two sheets of parchment paper. Then, place on a baking sheet with the parchment paper underneath. Bake the flatbread for 8-9 minutes.
  • Spread butter over each flatbread. Next, sprinkle with mozzarella cheese, garlic powder, and dried oregano. Return to the oven for 8-9 minutes, until the cheese is melted and beginning to brown. You can also broil for 1-2 minutes for more browning.
