Gluten Free Keto Granola

For a crunchy, grain-free snack, this gluten free keto granola makes the perfect sweet treat! Break off a piece, crumble in a bowl with milk, or sprinkle over yogurt for a protein-packed crunch!

Granola features oats, nuts, and seeds sweetened and baked until crisp. By taking out the oats and using mostly nuts and seeds, we can still create a crunchy, sweet treat without the carbs.

Lightly process the nuts and seeds with flax seed or flax seed meal (for some added fiber), a little sugar (monkfruit or another keto-friendly sweetener), and one egg white. Then, bake, let cool for a bit, and break into pieces. This keto granola can be enjoyed for breakfast or snack! You can even break into larger pieces and enjoy on its own! Its low carb, gluten free, and even grain free! Plus, granola is versatile! You can use your favorite variety of nuts and seeds.

How to Make Gluten Free Keto Granola

  1. Preheat the oven to 325 degrees.
  2. In a food processor, lightly process the flax seeds, almonds, and macadamia nuts. Then, add the pecans, pistachios, pumpkin seeds, and sunflower seeds. Lightly pulse. Next, add the sweetener, egg white, butter, vanilla, and cinnamon. Lightly pulse just until combined.
  3. Spread in a thin layer onto a lined baking sheet. Then, bake for 16-22 minutes, depending upon thickness. Mixture should be lightly browned. Allow to completely cool. Finally, break into pieces and store in an airtight container.
