One of the worst parts of a gluten free lifestyle is giving up pizza and other Italian favorites. In the past few years, there have been some decent substitutes; but, at the end of the day, it's just not quite the same. And, as much as I love pizza- I also love a good Stromboli! Layers of ham, pepperoni, and cheese wrapped inside a warm carb hug. Oh, I mean...dough.
And, it may seem like some melted cheese and a little cream cheese and almond flour would never resemble anything similar to dough- but, it just works. I swear, it feels like a miracle. But sure enough, you roll it between pieces of parchment paper and ta da! I also recommend wrapping the Stromboli using the parchment paper. The "dough" is pretty thin and may crack or tear a bit. Then, the nice thing about using cheese is that it will melt. Ba-bye cracks.

Not me! Just allow the Stromboli to cool a bit before slicing... It's a lot of melted cheese after all!
Stromboli is a baked Italian turnover. Bread or pizza dough is filled with cold cuts, veggies, and cheese. Then, it's baked to a golden brown.
Store leftover Stromboli in an airtight container in the fridge for 3-4 days. Reheat in the oven or air fryer for best results.
