Gluten Free Lemon Blueberry Blondies

These gluten free lemon blueberry blondies feature tangy lemon and lush blueberries in every bite! This homemade treat is sweet, moist, and sure to please a crowd!

This may come as a shock- but, I do NOT like fresh blueberries! 

I can't really explain it- it's just always been a thing.

Blueberry muffins? No, thanks. Do you have anything in a cinnamon or chocolate?

Blueberry pancakes? Not for me! Are there any chocolate chips?

Frozen in a smoothie? Ok, fine. Bring on the antioxidants! 

I know, I know! It's strange, but they have just never been a preferred fruit in my book.

But, these blondies make the perfect spring or summer treat! Bursting with fresh, tart, lemon flavor, plump blueberries, and topped with a sweet lemon glaze- it's hard to find someone who doesn't like them! Even me- I couldn't stop snacking!

Super simple to prepare! You only need one mixing bowl and a whisk. No mixer required. Bring them to your next potluck or backyard BBQ! They're sure to be a big hit!

Now, I used a full cup of blueberries, which was delish...but it also made the cake very moist on the bottom. I didn't mind- but some people might!

What is a blondie??

 Picture a warm, gooey brownie without the cocoa powder, AKA a blonde brownie or blondie! Many versions seem more like a cookie bar, but a true blondie should be similar to brownies.

 

Tips for Baking with Blueberries

  • Add a few extra! Sprinkle extra blueberries on top before baking for a prettier presentation.
  • Dry well! Make sure they have been washed and dried.
  • Dust with flour! Add a sprinkle of flour to help absorb some of the liquid and make them less likely to sink during baking.

Ingredients
  • 4 Tbsp. butter, melted
  • 1/2 c. sugar (I used 1/4 c. coconut sugar and 1/4 c. brown sugar)
  • 1 tsp. vanilla
  • Zest and juice of 1 lemon
  • 1 egg + 1 egg yolk
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 c. gluten free flour blend (I used 1/2 c. of oat flour + 1/4 c. of a gluten free blend)
  • 1 Tbsp. cream or milk (can use dairy free)
  • 3/4 - 1 c. blueberries
  • 1/2 Tbsp. gluten free flour blend

Lemon Glaze

  • 1 Tbsp. butter
  • 1 Tbsp. lemon juice (about 1/2 of a lemon)
  • 1/2 c. powdered sugar
Instructions
  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, whisk the butter, sugar, vanilla, lemon zest, lemon juice, and eggs. Next, whisk in the baking soda, salt, and gluten free flour blend. Finally, whisk in the milk/cream.
  • In a small bowl, mix the blueberries with 1/2 Tbsp. of flour. Fold into the batter. Then, pour batter into a lined or greased 9x9 baking dish. Bake for 18-22 minutes, until a toothpick comes out clean. Allow blondies to cool.
  • LEMON GLAZE: In a small bowl, melt the butter. Then, whisk in the lemon juice and powdered sugar. Add more sugar or liquid (lemon juice or milk/water) until desired consistency is reached. You want it to be pourable (drizzle-able), but also thick! Use a spoon to drizzle over the blondies.
