Gluten Free Lemon Brownies

With a soft crumb and a sweet glaze, these gluten free lemon brownies are moist, chewy, and bursting with tangy lemon flavor!

Imagine if fudgy brownies met lemon bars and decided they wanted to live together forever!

Then, we would have these citrus-packed brownies with a sweet and tangy lemon flavor! Don't worry- there's no chocolate involved! It's more like a blondie (AKA, white brownie) mixed with a lemon bar. Plus, they're drizzled with a lemon glaze for even more sweet citrus flavor!

This dessert mash-up truly is the best of both worlds! Made with just 6 simple ingredients, all you need is a mixing bowl and a whisk. No special equipment required. These lemony treats will quickly become your new summer favorite! And, these bars pair beautifully with fresh fruit and whipped cream or vanilla ice cream.

Note: For a cakier, but still moist, texture- add 1/4 tsp. baking powder and bake for an extra 1-3 minutes.

Ingredients in Gluten Free Lemon Brownies

  • Butter
  • Sugar
  • Eggs
  • Vanilla
  • Lemon Zest
  • Lemon Juice
  • Gluten Free Flour Blend
  • Optional: Baking Powder

How to Make Lemon Brownies

  1. Preheat the oven to 350 degrees.
  2. In a microwave-safe bowl, add the sugar and lemon zest. Then, use your fingers to rub the two together. This will help to infuse the dish with bright, lemon flavor. Next, add the butter to the dish and microwave for 10-15 second increments, until melted.
  3. Pour the butter-sugar mixture into a large mixing bowl. Then, whisk in the vanilla, lemon juice, and eggs. Finally, whisk in the gluten free flour blend.
  4. Spread batter into a greased 8x8 or 9x9 baking dish. Bake for 16-18 minutes, until a toothpick comes out mostly clean. Allow the brownies to cool completely.
  5. MAKE A LEMON DRIZZLE: In a small bowl, melt the butter, Then, whisk in the lemon juice and powdered sugar. Add a little more liquid or sugar until a thick glaze forms. Lastly, use a spoon to drizzle over the brownies. For a spreadable glaze, add more sugar.

The BEST Lemon Glaze

Most glazes simply use powdered sugar and a liquid. Very sweet, but not the best flavor on its own. So, I decided to create a better flavor by adding some melted butter! Pretty soon- you will be adding butter to all of your glazes!

1 Tbsp. butter

1 Tbsp. lemon juice

1/3 - 1/2 c. powdered sugar

In a small bowl, melt the butter. Then, stir in the lemon juice. Use a spoon, fork, or whisk to stir in the powdered sugar, until a glaze forms. Pour or drizzle over the lemon bars.

Lemon Bars vs. Lemon Brownies

Lemon bars have a shortbread crust with a gooey lemon filling. These lemon brownies feature a very moist lemon cake, topped with a sweet lemon glaze.

Storing Lemon Brownies

Lemon brownies should be stored in the fridge for 4-5 days. They will also freeze well for up to 2 months.

  • 1/2 c. gluten free flour blend
