It's always a little strange to me that s'mores are thought of as a summer treat. Usually I do not want to be anywhere near a fire on those warm evenings. But, then I spent a few days at the beach with cool and breezy nights. And even without marshmallows, the bonfires looked dreamy! And, who am I to pass up the chance to eat graham crackers, chocolate, and marshmallows?!?
I was going to make one big pie...but that would involve more of a time commitment. Summer desserts should be easy! So, I stuck with individual gluten free graham crackers. Then, I piped cream cheese, mixed with melted marshmallows. It may sound strange- but so good! Add some chocolate, mini marshmallows, and perhaps a few graham crackers crumbs and... We. Are. Done.
These mini pies are super simple and can be ready in 20 minutes or less!
No campfire needed.
The true inventor is difficult to pinpoint, but credit is given to the Girl Scouts & Boy Scouts of America. These treats first appeared in a cookbook in the early 1920s, referred to as a "graham cracker sandwich." The book referenced this campfire snack already being popular with the scouts. Early versions were also known as Some Mores. Today, that title has been shortened to create s'mores.
