Over the years I have created quite a few cheesecakes. With a graham cracker crust and sweetened cream cheese, it's hard to go wrong. No bake versions tend to be my favorite. They are so simple and quick! And now there are many GREAT gluten free graham crackers on the market! Woo-hoo!

This depends slightly on the ingredients, but typically a large no bake cheesecake should set in the fridge for 6-8 hours. Overnight is best. This allows a sturdier frame, where you can create nice slices. With this mini-version, you can enjoy right away or allow the cheesecake filling to rest in the fridge and assemble when read to eat! Making ahead and setting in the fridge will cause the gluten free graham crackers to become very soft. Still delicious- but more difficult to pick up and eat!
The age-old question...when broken down- cheesecake much more closely resembles a pie. With a crumb-crust and a custard-like filling, many consider cheesecake to be a pie. Because early Greek and Roman versions of this dish were made with baked cheese and flour, others like to think of it as a cake. Either way- cheesecake is de-lish!
