I know you might think I say this all the time- but I actually don't think I've ever said it.

It's hard to go wrong with graham crackers, marshmallows, and chocolate- so, I expected them to be good, but NOT this good!
Ooey. Gooey. Chocolate. Marshmallow. Graham crackers. Done.
Imagine if s'mores and cookies had a baby. Well, that baby is soft, chewy, and your new favorite dessert! I guarantee these s'mores cookie bars will disappear quickly!
First, I started with a gluten free graham cracker cookie crust. Next, there's a layer of marshmallow fluff and chopped chocolate. Oh, and then I added a bit more chocolate and some crushed graham crackers, once the bars came out of the oven. This is the perfect summer treat to bring to your next family party!
Now, I usually avoid marshmallow creme with all of the corn syrup, but just melted marshmallows would not quite be the same. Mini marshmallows can be a bit tricky in the oven. Broiled for a few minutes, they turn into golden, gooey perfection. But, when baked for too long- they melt and basically disappear! Marshmallow creme, aka fluff, is a MUST for this recipe! There are a few organic varieties, but I haven't been able to try one yet.
Marshmallow creme, aka fluff, will work best for this recipe! Marshmallows don't stand up well to the heat of the oven. During baking, they will melt into the cookie dough and create little craters- you won't really even see or taste them.
These cookie bars can be stored at room temperature or in the fridge for up to 1 week!
For traditional s'mores, sitting by the fire- you can use cookies, brownies crisps, a granola bar, or even donuts in place of the graham crackers. The bottom layer of these s'mores cookie bars is a gluten free graham cracker cookie, which would make the perfect outer layer for a s'more. The cookie dough layer calls for half a cup of gluten free crushed graham crackers, but you could also use any kind of gluten free sweet cookie or cracker.
With a layer of graham cracker cookie dough, marshmallow creme, and chopped dark chocolate- these gluten free s'mores cookie bars make one irresistible dessert!
