These stuffed tomatoes make the perfect pizza-esque treat for someone who can't have gluten or wants to cut down on their carbs! I can't believe I didn't think to make these sooner!

What type of tomato is best for stuffing?

Any type of round, plump tomato will do. Make sure they are about the same size for even roasting. I cut the tomatoes in half, but you could also slice off the top and stuff whole tomatoes. Keep in mind- the larger the tomato, the longer it will take to bake.

 

How do you hollow out tomatoes?

Slice off the top of a tomato. Then, use a spoon to scoop out the seeds into a small bowl. For a larger tomato, you could slice the tomato in half, which will make the process much easier.

Storing Gluten Free Stuffed Tomatoes

Store stuffed tomatoes in an airtight container in the fridge for 4-5 days. You could use the microwave to reheat, but oven, air fryer, or toaster oven will give the best re-heated flavor and texture.

Ingredients
  • 2 Tbsp. butter
  • 1/2 c. gluten free bread crumbs
  • 4 medium tomatoes, halved
  • 8 oz. cream cheese, softened
  • 1 Tbsp. olive oil
  • 1 c. shredded cheese, divided
  • 1 tsp. dried oregano
  • 4 - 5 basil leaves, chopped
Instructions
  • Preheat the oven to 400 degrees.
  • In a small skillet, heat the butter until melted. Then add the breadcrumbs and cook, stirring frequently for 4-5 minutes, until browned.
  • Halve the tomatoes and carefully scoop out the insides with a spoon. Next, brush with olive oil and season with salt and pepper. Place tomatoes cut-side up in a baking dish.
  • In a medium mixing bowl, beat the cream cheese and olive oil until smooth. Then, stir in the toasted breadcrumbs, 1/4 cup of cheese, oregano, and basil. Season with salt and pepper. Scoop filling into the tomato halves. Next, sprinkle with the remaining cheese and season with more oregano.
  • Bake for 15-20 minutes Set oven to high broil and broil for 1-2 minutes, until the cheese is browned.
