Gluten Free & Vegan Sugar Cookie Skillet

I often think of sugar cookies as chocolate chips cookies without chocolate chips, but that is far from the truth. Most sugar cookie recipes only use white granulated sugar and more of it!

Sure, they are basic; but, in the best possible way!

What can really make or break a sugar cookie is the accoutrements. Add some sprinkles, icing, cinnamon, or a combination! Colorful sprinkles will really add a pop of color to the light colored cookie and icing. And this sugar cookie skillet is loaded with sprinkles!

First of all, sharing one giant cookie skillet is much more fun than little individual cookies! Second, the size of the skillet results in a softer and chewier texture. It reminds me of those cookie cakes that were very popular in 90's malls. Such a simple concept, but everyone wanted to have one at their next birthday party!

This sugar cookie skillet uses simple ingredients you already have on hand. Plus, there's no gluten and no eggs. So, feel free to sample a bit of the dough. Not like you would have done that anyway...

Oh, and the finished product tastes a lot like sugar cookie dough, except it's baked with sprinkles and the BEST vanilla frosting! A moist and chewy center, with a slightly crisp edge. For a crispier edge, bake for a few extra minutes.

Basic. Simple. Sweet. Classic. Amazing!

No time?!? No problem! Simply use store-bought cookie dough! Decorate with some homemade icing and sprinkles...no one will know. (I won't tell)

Gluten Free & Vegan Sugar Cookie Skillet

  • Butter
  • Granulated Sugar
  • Brown Sugar
  • Applesauce
  • Vanilla
  • Salt
  • Baking Powder
  • Gluten Free Flour Blend

Simple Vanilla Icing

  • 4 Tbsp. butter (or vegan butter), softened
  • 2 Tbsp. milk or cream (can be dairy free)
  • 1 c. powdered sugar

In a medium bowl, beat the butter until smooth. Then, beat in the milk/cream and powdered sugar. Spoon into a piping bag with a star tip. 

 

Do you add sprinkles before or after baking sugar cookies?

Sprinkles should be added prior to baking. Otherwise, the sprinkles will not become one with the cookie and will simply roll away. You can even press them into the dough before baking. I also recommend topping frosting with a few extra sprinkles!

Ingredients
  • 1/2 c. butter (vegan)
  • 1/2 c. granulated sugar (organic for vegan)
  • 1/4 c. brown sugar (organic for vegan)
  • 1/2 c. applesauce
  • 2 tsp. vanilla
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/4 c. gluten free flour blend
  • 1 Tbsp. butter, melted (can use vegan)
  • Sprinkles
Instructions
  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, cream the butter, sugar, and brown sugar until smooth. Then, beat in the applesauce, vanilla, baking powder, salt, and gluten free flour blend.
  • Brush the skillet with melted butter. Spoon cookie dough into the skillet. Next, use a spatula to spread evenly. Top with sprinkles. Then, bake for 20-22 minutes. After cooled, top with icing and additional sprinkles.
