These healthy mixed nuts cookies are a great option for anyone following a Paleo, keto, or low-carb diet. They use super simple, wholesome ingredients and are both gluten-free and grain-free. The cookies are sweetened minimally with sugar or a sugar-free substitute and are held together by egg whites. For the firmest texture, it's best to store them in the fridge. They’re excellent for a high-fat energy boost and provide a good source of protein, fiber, and healthy fats- making them a nutritious and satisfying treat!

Now, they may fall apart a bit, but I like to think of them as healthy trail mix cookies.

Simply choose your favorite nuts- then chop, mix, and bake.

  • Pecans
  • Walnuts
  • Cashews
  • Macadamia Nuts
  • Pistachios
  • Chocolate Chips or Sugar-Free Chocolate Chips
  • Sugar or Keto-Friendly Sweetener
  • Egg Whites

How to Make Healthy Mixed Nuts Cookies

  1. Preheat the oven to 325 degrees.
  2. Lightly chop the mixed nuts using a knife or food processor. Then, add the nuts to a large mixing bowl. Stir together with the chocolate chips and sugar. Next, add the egg whites and stir until the mixture is well coated.
  3. Using a 1/4 measuring cup, scoop into small mounds on a baking sheet lined with parchment paper or a silicone baking mat. Then, bake for 10 minutes. Allow cookies to cool completely before removing from the baking sheet. Store in the fridge for firmest results.

  • 1 c. pecans, lightly chopped
  • 1 c. cashews, lightly chopped
  • 1/2 c. macadamia nuts, lightly chopped
  • 1/2 c. pistachios, lightly chopped
  • 1/2 c. chocolate chips
  • 1/4 c. sugar or 2 Tbsp. monk fruit syrup
  • 2 egg whites

  • Using a knife or a food processor, lightly chop the nuts. I prefer medium-sized pieces. Then, stir the nuts, chocolate chips, and sugar in a large mixing bowl. Next, add the egg whites and stir until the mixture is well coated.
  • Using a 1/4 measuring cup, scoop mixture onto a baking sheet lined with parchment paper or a silicon baking mat. Try to arrange into small piles. Then, bake for 10 minutes. Allow to cool completely before moving from the baking sheet. Store in the fridge for firmest results.
