Homemade Corn Salsa

For a simple, yet flavorful dish that can be served alongside many meals, this fresh homemade corn salsa makes a wonderful appetizer, side dish, or dip!

If you're new to cooking or just want a super simple dish with lots flavor- this corn salsa is perfect with tacos, burrito bowls, and salads, or grab a tortilla chip and get to dipping! Fresh and crunchy- it has a nice mix of textures!

And, even with only 6 ingredients, it's still BIG on flavor! Really almost anything with cilantro and lime juice- I'm in!

Plus, it only takes 5 minute to make! Well, it will take a bit more time if you want to roast or grill the corn...

Corn salsa is easy to make ahead and store in the fridge for 30 minutes or a few days. Mostly made with ingredients you already have, but you can truly make it your own! Consider adding some garlic, jalapeño, tomatillo, or a little cotjia or queso fresco.

A few years ago I came up with a recipe for Grilled Corn Salad and a Taco Corn Salad- this salsa is even faster and easier, with very similar flavors!

How to Cook the Corn (if you want)

This recipe is delicious with canned corn, but for even more depth of flavor, consider cooking the corn.

  • Grill
  • Boil
  • Roast in the Oven
  • Instant Pot
  • Use canned or frozen (no cooking required)

How long does it keep?

Once mixed, allow to sit for at least 30 minutes before serving. Then, simply store in an airtight container in the fridge for 4-5 days. 

 

Can I use canned or frozen corn?

You bet! This recipe is low maintenance with tons of flavor! For canned corn, simply drain and pat with a paper towel. For frozen corn, allow to thaw and then pat dry or boil for 2-3 minutes and drain.

Ingredients
  • 1 1/2 - 2 c. sweet corn
  • 1 orange pepper, diced
  • 1 medium tomato, diced
  • 2 scallions, diced
  • 1 handful of cilantro, chopped
  • Juice of 1 lime
Instructions
  • In a medium bowl, combine the corn, pepper, tomato, scallions, and cilantro. Drizzle with lime juice. Then, mix with a large spoon. For the best flavor, allow the salsa to sit in the fridge for at least 30 minutes before serving.
