This coffee cake, complete with a sweet crumb topping, boasts just 3g of net carbs per serving. It’s the perfect way to satisfy that sweet tooth, while still remaining in ketosis. 

This keto coffee cake features an almond flour-based batter that's sweetened with a keto-friendly sweetener- golden monk fruit. It also includes a crumbly, cinnamon-flavored streusel topping to add a bit of texture and flavor. I recommend using golden monk fruit or a brown sugar substitute for a darker, coffee cake look. This moist cake is perfect for brunch, dessert, or even a sweet snack! All you need is a mixing bowl and a whisk. I do recommend covering the cake with aluminum foil for the first 10-15 minutes of baking to prevent the top from becoming too browned. Also, cool completely before slicing. The cake will become even a bit firmer after being stored in the fridge.

  • Almond Flour
  • Golden Monk Fruit Sweetener
  • Greek Yogurt (Keto-friendly)
  • Cream Cheese
  • Butter
  • Eggs
  • Vanilla
  • Unsweetened Almond Milk
  • Baking Powder
  • Cinnamon
  • Salt

How to Make Sugar-Free Coffee Cake

  1. Preheat the oven to 350 degrees.
  2. STREUSEL TOPPING: In a small bowl, whisk together the almond flour, monk fruit sugar, and cinnamon. Then, cut in the butter using a pastry blender or clean hands, until mixture resembles coarse crumbles. Set in the fridge.
  3. In a large mixing bowl, whisk together the butter, Greek yogurt, cream cheese, monk fruit sugar, and eggs. Then, whisk in the almond milk, vanilla, baking powder, cinnamon, and salt. Finally, whisk in the almond flour.
  4. Spoon mixture into a greased 9x9 baking dish. Next, sprinkle the streusel on top.
  5. Cover and bake for 10-15 minutes. Then, remove the cover and continue baking for 35-40 minutes. (46-50 minutes total)
  6. Allow to cool before slicing.

A typical streusel consists of sugar or brown sugar, flour, and butter. Sometimes there are also oats. So, only butter is keto-friendly. This keto streusel uses butter, almond flour, and a golden monk fruit or brown sugar substitute. All of the sweetness with very little of the sugar and carbs!
