Keto Flatbread Stromboli

For a fun snack, appetizer, or low carb dinner, this keto flatbread stromboli is made with an almond flour crust and filled with pesto, meat, and cheese! Ready in 30 minutes or less!

There are many things not to love when following a keto diet; but, there are a few things that are absolutely awesome!

A few of my favorite keto-friendly things are butter, bacon, cream, meat, and cheese!

Which makes stromboli a terrific keto choice...well, except for that pizza dough.

Luckily, I came up with a gluten free flatbread dough that we can make low carb. Then, we just need to add some fun toppings, fold, and bake.

The dough comes together very easily with only 4 ingredients. Plus, I love that it's packed with protein! Oh, and no rising time required. You can refrigerate the dough and bake later or use right away. Simply roll the dough between two sheets of parchment paper. Leave the dough sitting on the bottom sheet of parchment. You will need to find a keto-friendly plain Greek yogurt, which can be a bit challenging. I like to use Painterland Sisters with just 1g of net carbs.

What is stromboli?

Stromboli is a baked Italian turnover. Bread or pizza dough is filled with cold cuts, veggies, and cheese. Then, it's baked to a golden brown.

Stromboli vs. Calzone

Both stromboli and calzones feature bread or pizza dough stuffed with meat, cheese, and sometimes veggies. Calzones originated in Naples and are folded in half, to create a half-moon shape. Stromboli is rectangular, but also rolled- kind of like a burrito. Stromboli is Italian-American and originated in Philly. Ok, so because the keto flatbread dough is a little fragile, technically I made a calzone.

Can you eat stromboli on a keto diet?

Normally, no you cannot enjoy stromboli on a keto diet. Traditionally, stromboli is made with pizza dough as a crust, which is high in carbohydrates. With this recipe, the crust is made from almond flour, which only has a few carbs. The toppings are mostly low carb in nature, so stromboli can be a great keto dish!

Keto Flatbread Stromboli

Ingredients
  • 1 c. almond flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. Greek yogurt
  • 2 Tbsp. pesto
  • 1/4 lb. deli ham
  • 2 oz. pepperoni slices
  • 1/2 - 1 c. cheese, shredded
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, whisk the almond flour, baking powder, and salt. Then, beat in the Greek yogurt. Use clean hands to work the dough slightly. Dough can be refrigerated or used right away.
  3. Roll the dough between two sheets of parchment paper. Next, leave the parchment paper on the bottom and slide the flatbread onto a baking sheet. Spread a light layer of pesto on the flatbread. Then, top about half of the dough with ham, pepperoni, and cheese. Use the parchment paper to fold the other half of the dough over the meat and cheese portion. Leave the parchment paper on, but lightly press the edges of the stromboli together.
  4. Bake for 6-7 minutes. Then, remove from the oven and flip the stromboli over. Finally, return to the oven for 6-8 minutes, until the top is browned.
