I love coconut and peanut butter, but when I first heard the two together, even I was a bit skeptical. By using coconut cream and coconut oil we can add healthy fats without carbs. But, there will also be some coconut flavor, so if you're not a fan...then you will need to make a few adjustments. You can use refined coconut oil, which does not have a coconut flavor. You could also use organic shortening and cream, milk, or almond milk.
Without the high sugar content, this fudge will not stabilize at room temperature or when stored in the fridge. It needs to be stored in the freezer.
