Keto Stromboli Bake

For a creamy low carb casserole, this keto stromboli bake is perfect for brunch or a weeknight dinner!

This keto stromboli bake is a low-carb, high-fat take on traditional stromboli. I was inspired to make a savory French toast casserole. So, I baked toasted keto bread with a creamy cheese sauce, ham, pepperoni and shredded cheese. It's kind of like macaroni and cheese with gluten free croutons instead of pasta. It's gluten free, low carb, keto-friendly, and can easily feed a crowd!

So yummy- even your carb-loving friends will enjoy!

Keto Bread

Keto bread boasts a lot of fiber, which helps to offset the carbs. Some brands can have up to 11g of fiber per slice! Check the label, as the carb count can vary considerably based on the brand. Also, keto bread is often, but NOT always gluten free. Check the label to be sure.

Ingredients in Keto Stromboli Bake

  • Keto Bread
  • Cream Cheese
  • Butter
  • Heavy Cream
  • Unsweetened Almond Milk
  • Mozzarella Cheese
  • Provolone Cheese
  • Pepperoni
  • Ham

How to Make Keto Stromboli Bake

  1. Preheat the oven to low broil.
  2. Brush one side of each slice of bread with the melted butter. Then, broil for 3-4 minutes, until beginning to brown. Flip and broil the other side for 3-4 minutes. Set aside and allow to cool before slicing into bite-sized pieces.
  3. Next, set the oven to 350 degrees.
  4. In a medium saucepan, heat the cream cheese, cream, milk, and butter. Once that is mostly melted together, whisk in the shredded mozzarella cheese. Season with salt and pepper.
  5. Next, grease a 9x13 baking dish. Cover the bottom of the baking dish with about half of the bread. Then, layer in about half of the white sauce, ham, pepperoni, and about 1/2 cup of shredded cheese. Next, top with the slices of provolone. Then, repeat to create a second layer (minus the provolone.)
  6. Bake for 18-20 minutes. If desired, set the oven to high broil for 1-3 minutes, until the top is browned.

Can you eat cheese on a keto diet?

Yes, cheese can be enjoyed when following a keto diet! In fact, it's practically the perfect keto food- high fat, moderate protein, and low in carbs. But, not all cheese is created equal. Goat cheese, cream cheese, Parmesan, cheddar, brie, mozzarella, bleu, and Monterey jack are all very low in carbohydrates. One serving contains 0-1 grams of carbs. Ricotta and cottage cheese are higher in carbs and should be avoided or very limited on a keto diet.

Is stromboli healthy?

The healthiness depends on how it is made. When ordered at a restaurant-stromboli is not very healthy. It’s usually pizza dough filled with meat and cheese. At home you can also add veggies. Can even be made to fit low carb or gluten free

  • 1 loaf of keto bread (about 16 slices)
  • 2 Tbsp. butter
  • 8 oz. cream cheese
  • 3/4 c. heavy cream
  • 1/2 c. unsweetened almond milk
  • 2 Tbsp. butter
  • 1 c. mozzarella cheese, shredded
  • 8 oz. ham, diced
  • 2 oz. pepperoni
  • 6 slices of provolone
  • 1-2 c. cheese, shredded
