Zucchini, aka summer squash, is a versatile vegetable that can be used to create main dishes, side dishes, and even dessert! Though it may look similar to cucumbers, the flavors are quite different. In addition, zucchini is most often consumed cooked. One of the trickiest parts of working with zucchini is the amount of water contained inside these green beauties.
So, when your neighbor dropped off 5 large zucchinis from their overgrown garden, you probably made a lot of zucchini bread. But now, there is lasagna, ratatouille, fritters, salads, tacos, fries, quiche, or soup. You can even find it inside chocolate cake or brownies!
I love simply sautéed zucchini, but sometimes you just need a little more flavor. For these mini boats- I went Italian, but there are so many ways to go! Greek, Mexican, Thai, Chinese, French... You can also slice each zucchini in half length-wise and make larger boats. But, these mini bites are so much cuter! Plus, they cook faster and and could even be picked up as appetizer.
I like to really load these up, so they could easily become your entire meal; but, they would go well with a salad, corn on the cob, or garlic bread.
Make these Italian zucchini bites! Overgrown zucchini is called marrow. Perfectly fine to eat, but there will be a lot more of the white flesh and water. Remove some of this center portion before using. It would also be a great time to add some zucchini to your muffins, bread, brownies, and cake- hello, moisture!
These loaded zucchini bites are stuffed with an Italian ground turkey mixture, then topped with cheese and basil. Perfect for a low carb dinner or snack!
