Mini Bacon-Wrapped Meatloaf Sheet Pan Supper

For a cozy and flavorful weeknight dinner, mini bacon-wrapped meatloaf is sure to hit the spot! Tender meat, wrapped with bacon and roasted with potatoes for an easy sheet pan meal.

Comfort good gets a major upgrade with these mini bacon-wrapped meatloaves. Using just 6 ingredients (plus S&P), you can create individual-sized meatloaf with incredible flavor! And not only are these mini loaves super cute, but they will also take less time to bake.

Look impressive, but mini meatloaf is simple to prepare. I've seen a few versions where the bacon is wrapped around only the sides of the loaf. I think this is a mistake. First, it's harder to secure the bacon. In addition, when the bacon is wrapped over the top of the meatloaf, the fat from the bacon will cook down through, making your final dish super moist! When it's wrapped around the outside, that just will not happen.

For moist meatloaf, I recommend using meat with a higher fat content, which will help to create more moisture. I used ground turkey, but beef or chicken would also be terrific! For leaner cuts- turkey, chicken, or lean beef- there are a few things you can add to create a moist meatloaf. (see tips below)

Meatloaf Tips & Tricks

  1. Use clean hands to mix until just combined. Don't overmix.
  2. Portion the meat before you begin to shape, this will ensure they are similar-sized.
  3. Don't use thick-cut bacon.
  4. One slice of bacon per mini loaf.

  • Coconut aminos or soy sauce
  • Gluten free breadcrumbs
  • Egg
  • Salt and pepper
  • Oregano
  • 6 slices of bacon
  • Baby potatoes
  • Olive oil

Secrets to a Moist Meatloaf

  1. Use meat with a higher fat content- like beef.
  2. Wrap with bacon.
  3. With leaner meat, grate 1/2 of a small onion directly over the meat.
  4. Add breadcrumbs soaked in milk.
  5. Add coconut aminos or soy sauce for flavor and moisture.
  6. Don't overmix the meat.

Storage

These mini meatloaves can be prepped the night before and stored in the fridge. The next day, let the meat come to room temperature for 30 minutes before baking in the oven. Once baked, they can be stored in the fridge for 3-4 days. These mini loaves also make a great dish to drop off for a friend, as they can also be frozen for up to 3 months.

Ingredients
  • 1 1/2 lbs. ground turkey
  • 2 tsp. coconut aminos or soy sauce
  • 1 tsp. dried oregano
  • 1/4 c. gluten free breadcrumbs
  • 1 egg
  • Salt and pepper
  • 6 slices of bacon
  • 1 1/2 lbs. baby potatoes, halved
  • 1 Tbsp. olive oil
Instructions
  1. Preheat the oven to 400 degrees.
  2. In a large mixing bowl, add the ground turkey, coconut aminos, dried oregano, gluten free breadcrumbs, and one egg. Season with salt and pepper. Then, use clean hands or a spoon to mix until well-combined. Split into 6 equal-sized portions.
  3. Shape into mini rounded loaves. Next, carefully wrap each mini loaf with one slice of bacon and place on a lined baking sheet. Bake for 32-38 minutes, until an internal temperature reaches 165 degrees.
  4. In a medium bowl, add the potatoes and olive oil. Use clean hands to mix the potatoes until coated. Then, season with salt and pepper.
  5. After the meatloaf has been roasting for about 10 minutes, add the potatoes to the baking sheet. Roast potatoes for about 25 minutes, until fork tender.
