This recipe for Peanut Butter Chocolate Chip Baked Oatmeal is a nourishing and delicious breakfast option that's both gluten-free and easy to prepare. With a balance of healthy fats, carbs, protein, and fiber, it's a warm and cozy dish that stays moist without being mushy.

Since I added 2 scoops of protein powder, I also added an extra 1/2 cup of milk, but you may need to adjust the liquid slightly based on the brand/type of protein powder used. Sprinkled with chocolate chips, this baked oatmeal almost feels like you're eating cake! Prep takes just a few minutes, and then the oven does the rest of the work.   • Peanut Butter
  • Chocolate Chips
  • Protein Powder

Steps to Make Peanut Butter Chocolate Chip Baked Oatmeal

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, whisk the applesauce, brown sugar, maple syrup, butter, peanut butter, and yogurt. Then, whisk in the eggs, protein powder, and milk. Next, stir in the oats and chocolate chips.
  3. Pour into a greased 9x13 baking dish and bake for 32-36 minutes.
  4. Enjoy warm or cold! Store leftovers in the fridge.

The largest difference is obvious. Baked oats have been baked in the oven, whereas overnight oats have been mixed and left to soak overnight in the fridge. Both can be eaten warm or cold. And, they are both easy to prepare and can feed a crowd!

  • 2 Tbsp. maple syrup
  • 4 Tbsp. butter, melted
  • 1/4 c. creamy peanut butter
  • 1/2 c. Greek yogurt
  • 2 eggs
  • 2 scoops protein powder
  • 2 c. milk
  • 3 c. old-fashioned or rolled oats
  • 1/3 - 1/2 c. chocolate chips
