My grandma made the BEST fudge! It was SO good! I don't know the recipe, but I am positive it began and ended with sugar. A few years ago, my mother hosted a dinner where we made some of Gran's best dishes. She followed the recipe closely, except she just couldn't bring herself to add all of the sugar. There was so much! So, it wasn't exactly like Grandma made, but it was still delicious and VERY sugary!
But, I got to thinking...there must be a better way! This fudge features mostly peanut butter. Then, a bit of brown sugar, milk, and coconut oil help to bring the creamy texture together. Without the high sugar content, this fudge will not stabilize at room temperature or when stored in the fridge. It needs to be stored in the freezer.
But, good news- you won't need to let it sit for a few minutes. It's perfect to eat right out of the freezer!
