Is chili better in a slow cooker?

Most people will say yes. The longer cooking time helps to draw out the most flavor from each ingredient. Plus, it's nice to set it and forget it!

Can you overcook chili in a slow cooker?

Up to 8 hours on low should be fine. Any longer and the ingredients may begin to break down. If you prefer a crunchier vegetable, you could sauté and add toward the end of the slow cooking time.
