Whenever I hear fajitas, my first thought is always a sizzling black skillet from Chilis. Even though I've never actually ordered them...not when there's chicken tortilla soup and bottomless tortilla chips!
But, I have made my own many times. They make a simple and tasty dinner with many opportunities for variety. Fajitas involve strips of meat and veggies that are served with tortillas. Originally made with strips of skirt steak, chicken, onions, and bell peppers are also very popular staples today.
But, there's no need to head to a restaurant. Not tonight. All you need is chicken or beef, an onion, bell peppers, some olive oil, taco seasoning mix, tortillas, and one sheet pan. What? Only one dish for cooking?!? Yes, ma'am.

Fajitas in a tortilla are basically tacos; however, tacos are not always fajitas. The hallmarks for a fajita include strips of meat and/or veggies that are grilled and soft tortillas. Today, chicken is very popular, but fajitas first featured steak. Tacos use a variety of shells and fillings. Almost anything goes.
With minimal cookware and 30 minutes, these sheet pan chicken fajitas make a healthy dinner perfect for any night of the week!
