Have you ever seen those perfect women on Instagram? The ones with a career, large open kitchen, 2.5 children, the perfect brunch table, and the ability to throw massive kids' birthday parties with little time, money, or effort? Oh, and everything they order on Amazon fits perfectly?!? They seem to do a little cooking on Sunday and somehow lunches and dinners for the week are done. But, how?!?
Well, I can't do much about most of those things, but I can help with some easy meal prep. Start with 2 1/2 - 3 lbs. of pork and your slow cooker. Then, add a few veggies, some rolls and tortillas, and you can easily turn this into multiple weeknight dinners.

In case you haven't heard, slow cookers are AMAZING! They allow you to cook a large portion of food, usually with very little effort. Plus, you can accomplish so many things, WHILE the food is cooking! There are also Insta-pots if you have trouble with delayed gratification.
Yes, it is possible to overcook meat in a slow cooker. Fattier cuts will hold up very well. Other cuts can become dry more easily. Cook on high for 5-6 hours or low for 8-9 hours. The meat should easily shred. You can also check for doneness with a thermometer (145 degrees in the center.)
I like to store pork in the leftover juice. This helps to keep the meat moist. It will keep well in the fridge for 4-5 days. If it gets a little dry, you could also add a few drops of water when reheating.
With just 5 ingredients, this tender, slow cooker pulled pork can be used to make a few weeknight dinners!
