Microwave the rice. Follow the package directions- usually, you open a little and then microwave for 90 seconds.
Stir the rice into the skillet with the tomatoes and spices. You could also serve with rice on the bottom and layer the beef and peppers on top. Or for a lower carb version, serve with cauliflower rice.

Ingredients
Olive oil
1 small onion, diced
3 bell peppers, diced
2 cloves of garlic, minced
Salt and pepper
1 lb. ground beef
1 pkg. microwaveable rice
1 can diced tomatoes (about 15 oz.)
1 tsp. dried oregano
1/2 tsp. cumin
1 c. cheddar cheese, shredded
Instructions
Heat a large skillet with 1-2 Tbsp. of olive oil over medium-high heat. Then, sauté the onion and peppers for 4-5 minutes. Season with salt and pepper. Next, add the garlic and continue to sauté for 2-3 minutes.
Meanwhile, microwave the rice.
Move the peppers and onions over to one side of the skillet. Then, add the ground beef and cook until browned, about 7-9 minutes. Season with salt and pepper.
Stir the rice into the skillet. Then, add the tomatoes, oregano, and cumin. Stir until well combined. Finally, sprinkle with the cheese and allow to melt.
