Super Simple Key Lime Coconut Cheesecake

For a sweet treat with minimal time and effort- this super simple key lime coconut cheesecake will always hit the spot!

When it comes to dessert, cream cheese is one of my favorite ingredients! I mean, carrot cake just would not be the same without the cream cheese frosting. You can use it to kick brownies up a notch or as a base for dips- both sweet and savory! Cream cheese can easily be used in a variety of ways.

So, when you want a sweet treat, but don't feel like baking...I've got the solution for you! This no-bake cheesecake is made with just a mixing bowl and a mixer- absolutely no cooking required. Plus, there is tons of flavor with only a few simple ingredients!

And once the cream cheese is softened (try one of these tricks to help soften cream cheese), this recipe will be ready in 5 minutes or less!

Then, simply pipe, spoon, or dip- it's up to you!

Don't like coconut or lime?!?

No problem! Simply use a different Greek yogurt and substitute the lime juice for orange juice or even milk/cream. The door was just opened to SO many flavor opportunities!

Coconut Greek Yogurt

Coconut Extract

Lime Juice

Powdered Sugar

Whipped Topping

Gluten Free Graham Crackers (I used Simple Mills Sweet Thins)

How to Make No-Bake Key Lime Coconut Cheesecake

  1. In a medium mixing bowl, beat the cream cheese, yogurt, coconut extract, lime juice, and powdered sugar until smooth.
  2. Use a spatula to fold in the whipped topping.
  3. Grab a piping bag with a fun tip or a spoon.
  4. Pipe cheesecake over the graham crackers or spoon into a small bowl for dipping.
  5. Enjoy!

 

Do I need to use key limes?

Of course not! They tend to be the best; however, I cannot usually find them at my local grocery store. Also, they produce much less juice than other limes. Any lime juice will do, but fresh is always best!

Ingredients
  • 4 oz. cream cheese, softened
  • 1/2 c. coconut Greek yogurt
  • 1/2 tsp. coconut extract
  • Juice of one lime
  • 2 Tbsp. powdered sugar
  • 1 c. whipped topping
  • Gluten free graham crackers
Instructions
  • In a medium mixing bowl, beat the cream cheese until smooth. Next, beat in the yogurt, coconut extract, lime juice, and powdered sugar. Beat or fold-in the whipped topping. Pipe cheesecake mixture over the graham crackers or spoon into a small bowl for dipping. Store leftovers in the fridge.
