Taco Tuesday is here again! Let's celebrate with a healthier, low-carb version. But- trust me, you will not be missing anything!
Stuffed peppers may look impressive, but they are fairly simple to prepare. Plus, there are so many flavor varieties to choose from. For this version, start with some ground meat and diced veggies, seasoned with cumin and a few other spices (taco seasoning), and salsa. Then, stuff everything inside of a pepper and bake. For a quicker meal, you could pre-bake the peppers while preparing the filling.
So, is stuffing a pepper inside of another pepper something akin to cannibalism??
Let's taco about something else...
Bell peppers: any color
Meat: ground or shredded turkey, beef, or chicken (could also use a vegetarian option or leave out completely)
Peppers & Onions: Diced vegetables add flavor and texture.
Salsa: This adds tomatoes PLUS some other veggies and spices.
Taco Seasoning: Cumin, onion, garlic, salt, pepper, chili powder...maybe a kick of cayenne or red pepper flakes
Shredded Cheese: Choose your favorite variety.
Cilantro: I find this to be NECESSARY for any Spanish dish, but not everyone is a fan.
Other Possibilities: Black beans, refried beans, rice, olives, avocado, sour cream, tortilla strips
Yes, you can cook the peppers before stuffing. This will reduce the amount of cooking time, once meat and/or veggies are added. You can also wait and only cook the peppers after they are stuffed. This will simply take more time.
Some prefer to boil peppers for a few minutes, prior to stuffing. This blanching will help them to soften slightly. You could also place the peppers in the oven for a few minutes, while you are preparing the stuffing mixture.
