Gluten Free Baked Coconut Lime Doughnuts

Pastries of fried dough, with a sweet glaze or dipped in powdered sugar, doughnuts are most often enjoyed for breakfast.  The two basic types are cake doughnuts and yeast-risen doughnuts. Glazed, iced, dipped in powdered sugar or filled with jelly or custard, doughnuts are hard to resist!

This version is a gluten free cake doughnut. With a moist and tender crumb on the inside and a sweet lime drizzle on top, they make a delicious springtime treat! Perfect for brunch, a snack, or even dessert! You'll feel just like you're laying on a beach sipping Mai-Tais!

And these babies are baked, not fried. So, they are at least a little kinder on that beach body. Plus, they don't need yeast, so prep is a breeze!

Best enjoyed with a cup of coffee or a tall glass of milk!

Ingredients in Gluten Free Baked Coconut Lime Doughnuts

  • Butter
  • Brown Sugar
  • Applesauce
  • Vanilla
  • Eggs
  • Lime Zest
  • Lime Juice
  • Milk
  • Coconut Flakes
  • Gluten Free Flour Blend
  • Corn Starch
  • Baking Powder
  • Salt

How to Make Baked Coconut Lime Doughnuts

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, whisk the butter, brown sugar, applesauce, vanilla, lime zest, lime juice, milk, and eggs. Then, whisk in the baking powder, salt, cornstarch, ground coconut flakes, and gluten free flour blend.
  3. Spoon or pipe into greased doughnut wells. Fill about 1/2 - 2/3 full. Next, bake for 9-12 minutes, until lightly browned and an inserted toothpick comes out clean. Allow to cool.

Are baked doughnuts better?

In general, doughnuts are not considered a health food; but, baked doughnuts are healthier than fried doughnuts. Baked doughnuts have less fat and calories than their deep-fried counterparts.

Doughnuts vs. Donuts

Both spellings are accepted. "Doughnut" is the spelling recognized internationally. The shorter "donut" is an American spelling.

The Best Glaze

Most glazes simply use powdered sugar, a flavored extract, and milk or cream. They add some extra sweetness, but the flavor is not very good on its own. But, by adding one more simple ingredient, you will create an irresistible glaze! Good enough to eat straight from the bowl! Simply whisk and drizzle!

1 Tbsp. butter, melted

1/2 tsp. flavored extract

1 Tbsp. juice or milk/cream

1/3 c. powdered sugar

  • 1 stick of butter, melted
  • 1/2 c. brown sugar
  • 1/2 c. applesauce
  • 1 tsp. vanilla
  • Zest of one lime
  • 2 Tbsp. lime juice
  • 1/4 c. milk

  • 1 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 c. cornstarch
  • 1 c. coconut flakes, ground
  • 3/4 c. gluten free flour blend

Lime Drizzle

  • 2 Tbsp. butter, melted
  • 2 Tbsp. lime juice
  • 2/3 c. powdered sugar
Instructions
  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, whisk the butter, brown sugar, applesauce, vanilla, lime zest, lime juice, milk, and eggs. Then, whisk in the baking powder, salt, cornstarch, ground coconut flakes (I used a food processor), and gluten free flour blend.
  • Spoon or pipe into greased doughnut wells. Fill about 1/2 - 2/3 full. Next, bake for 9-12 minutes, until lightly browned and an inserted toothpick comes out clean. Allow to cool.
  • LIME DRIZZLE: In a small bowl, whisk the butter and lime juice. Then, whisk in the powdered sugar. Add a little more powdered sugar or liquid until a thick, but pourable glaze is formed. Use a spoon to drizzle over the doughnuts. If desired, garnish with lime zest and toasted coconut flakes.
