Gluten Free S'mores Cereal Treats

Oh wait- but it's 90 degrees outside! So, maybe we don't really want to sit near a fire...

Move over Snap, Krackle, and Pop! There's a new Sheriff in town. And, he's bringing chocolate and graham crackers to the mix!

These s'mores cereal treats feature rice cereal, butter, and melted marshmallows for that classic Rice Krispies Treats flavor. Then, we add chocolate and graham crackers to give you that s'mores fix! Super simple to prepare, with only one baking dish. Plus, there's no actual baking involved! And, bonus: your hair won't smell like a campfire!

Made with 5 simple ingredients and ready in 20 minutes or less- these s'mores Krispies treats will be sure to become a new family favorite!

I couldn't find a decent gluten free equivalent to gluten free golden grahams. Instead, I opted for an organic version of Rice Krispies and then added some broken gluten free graham cracker pieces (the ones from Simple Mills are absolutely amazing!) You could also replace the rice cereal with a graham cereal.

Simply melt, pour, press, let sit...and then cut.

Tips & Tricks

  • Prep all ingredients before melting the butter and marshmallows.
  • Spray your fingers or spoon with nonstick spray.
  • S'mores cereal treats can be eaten right away or let sit and firm up a bit. You can also store in the fridge. Will be a little firmer, but will soften after sitting at room temp.
  • Store in an airtight container.

Gluten Free S'mores Cereal Treats

Ingredients
  • 4 c. crispy brown rice cereal
  • 2 c. gluten free graham cracker pieces
  • 2 c. mini marshmallows
  • 1 c. chocolate chips or about 4 oz. of Hershey bars, chopped
  • 6 Tbsp. butter
  • 10 oz. large marshmallows (or any size)
Instructions
  • In a large mixing bowl, combine the cereal, graham crackers, 1 1/2 cups of mini marshmallows and the chocolate chips (or about 2/3 of the chopped chocolate bars.) Save the remaining mini marshmallows and chopped chocolate to press into the tops of the bars.
  • In a medium saucepan, melt the butter over low heat. Then, add the bag of large marshmallows and stir until melted.
  • Pour the melted marshmallow mixture over the cereal mixture and quickly stir until well-coated. Pour mixture into a lined or greased 9x13 baking dish. Lightly press the mixture, using clean fingers or the bottom of a measuring cup. Next, add the remaining mini marshmallows and chocolate bars. Again lightly press (the more you press, the harder the treats will be.) Allow to cool to room temperature before cutting into squares.
