Baked oatmeal is one of my favorite breakfast options! A little prep on Sunday means a fun and healthy breakfast ready for the week! There are so many flavor variations and it's something I always look forward to! Cute and tasty, my niece and nephew even refer to them as muffins or cupcakes.

Grown in Florida and California, key limes are small with a light yellow color. They are known for being tart and fragrant. Their skin is much thinner, making them last for only a few days. Most notably, they are used for key lime pies. These little babies only produce about 2-3 tsp. of juice. I often can't find them in my local grocery store. For this recipe, you can use regular limes. So, technically this is not key lime baked oatmeal...but it just sounds so much better!
Absolutely! I usually do. If you’re not going to serve the oatmeal with a protein (eggs, yogurt, etc.), I would definitely add some protein to help balance the carbs. For a baked version, I will use flour OR protein powder, not both.
Yes, baked oatmeal freezes very well! Keep in an airtight container for up to 3 months!
Baked oatmeal should be stored in the fridge for 4-5 days. To reheat- simply microwave for 20-30 seconds. Baked oatmeal can also be enjoyed cold!
